A Journey from Tokyo to California
Our story begins decades ago in a quiet alley near the world-famous Tsukiji Fish Market in Tokyo. Every morning before sunrise, our founder, Chef Hiroshi Nakamura, would follow his grandfather through the narrow stalls of the market. There, amid the clatter of fishmongers and the aroma of the ocean, he learned the values of freshness, discipline, and respect for ingredients—principles that shaped his culinary philosophy for life.
Years later, Chef Hiroshi moved to the United States with a dream: to bring the spirit of authentic Japanese cuisine to the West, while honoring the traditions he grew up with. He settled in California, where global cuisine thrives, but something was missing—a place that told a story through every bite.
More Than Just a Restaurant
In 2012, Tsukiji Japanese Sushi Hibachi opened its doors. Named in homage to the legendary fish market, the restaurant was founded on one simple idea:
